Vegan Soda Bread

A tasty Vegan Soda Bread that takes only takes 1 hour from start to finish. The crusty texture is perfect for soup. I additionally added Caramelised Onion, Thyme, Rosemary & Raisins to compliment our Parsnip & Apple Soup.

Ingredients for Vegan Soda Bread

Serves 6

Phase 1

400 ml Fresh Oat Milk & Pulp £0.20
(Alternatively Carton Oat Milk)

1 tbsp White Wine Vinegar £0.05

Phase 2

350 g Plain Flour £0.30

150 g Granary Flour £0.30

1 tsp Bicarbonate of Soda £0.05

1 tsp Salt

Total Cost £0.90 Cost per head £0.15

Optional:

4 Caramelised Onion Cubes

30 g Raisins

1 tsp chopped/dried Thyme

1 tsp chopped/dried Rosemary

Creating Vegan Soda Bread

Prep time 15 minutes

Cooking time 45 minutes

Phase 1
  1. First & foremost Wash Your Hands
  2. Mix the 1 tbsp White Wine Vinegar with 400 ml Fresh Oat Milk
  3. Preheat the Oven to Gas 7
  4. Coat your baking tray with flour

Phase 2
  1. Put the 350 g Plain Flour, 150 g Granary Flour, 1 tsp Bicarbonate of Soda & 1 tsp Salt in a large mixing bowl
  2. Combine ingredients evenly
  3. Make a well in the middle and add the Oat Pulp (if using) and half of the Oat Milk
  4. If using the optional ingredients add them all to the centre as well
  5. Take a palette knife to combine the mixture
  6. Pour in the rest of the Oat Milk and continue to work with the palette knife until it is doughy
Phase 3
  1. With the flat of the knife level make the surface of dough level
  2. Turn the bowl upside-down onto the floured tray
  3. Use a long sharp knife to cut a deep cross into the top of the dough

Phase 4
  1. Sprinkle flour over the top and bake for 45 minutes
  2. When cooked leave for 10 minutes before slicing.
