Jaffa Cake Granola


There is just something about a little dark chocolate in the morning that I love with my cup of coffee, they go down a treat together. This easy Granola recipe is a great way to get store some energy for the day ahead, with plenty of protein, minerals, vitamins, and antioxidants.

Ingredients for Jaffa Cake Granola

Makes a large jar

500 g Oats
(I used Rolled Oats)

200 ml Maple Syrup or Golden Syrup

100 g Coconut Oil

2 tsp Cinnamon

100 g Dark Vegan Chocolate

1 Large Orange

200 g Mixed Nuts

Creating Jaffa Cake Granola

Prep time 10 mins – Cook time 30 mins – Cool time 30 mins

Phase 1
  1. Wash your hands!
  2. Preheat the oven to Gas 3
  3. Zest the orange (finely grate the orange part of the skin)
  4. In a pan add the 100 g Coconut Oil, 200 ml Maple Syrup or Golden Syrup, 2 tsp Cinnamon & the juice from the zested Orange
  5. Let this have 3 mins on a low-med heat
  6. Give the 200 g Mixed Nuts a rough chop or (men look away) just bash them in the bag with a rolling pin
  7. Chuck the Nuts & 500 g Oats into a Large Mixing Bowl
  8. Pour over the Orangey Syrup & mix with a spoon
  9. Line a large tray with baking paper and tip the mix in
  10. Spread it out so it is fairly even & bake for 30 minutes

Phase 2

  1. Let the Granola cool for 30 minutes
  2. During this time break up the 100 g Dark Vegan Chocolate and chop into chunks
  3. Break up the Granola into the large mixing bowl, add the Chocolate Chunks and Orange Zest and give a gentle mix (keep some chunks in there)
  4. If the Granola is at all still warm leave it out to cool
  5. Once it is cooled down, put it in a jar ready for the morning
  6. Serve with your favourite Vegan Milk
