Jack Monroe’s Jackfruit Caesar Salad

I must admit I was a little sceptical about the Jackfruit Caesar Salad. However, this recipe from Jack Monroe was great, very quick & easy to make & thoroughly enjoyable to eat. The taste & meaty texture of the shredded Jackfruit is amazing, this is one we will be having more of over the summer for sure, especially with this beautiful lettuce we have growing in our veg patch.


Ingredients for Jack Monroe’s Jackfruit Caesar Salad

Makes 4-5
  • 2 tbsp Vegan Mayo
  • 1 tsp Nutritional Yeast Flakes
  • 1/2 tsp Dijon Mustard
  • 1 tsp minced Garlic
  • A squeeze of Lemon Juice
  • 1 tbsp Olive Oil
  • Some filtered water
  • Some old crusty bread
  • 1 x 400g tinned Jackfruit
  • 1 x 400g tinned Chickpeas
  • Lettuce (Cos/Babygem)

  • A Jar with Lid
  • Frying Pan


Creating Jack Monroe’s Jackfruit Caesar Salad


Prep time 20 mins


Phase 1 (Make the dressing)
  1. Wash your hands
  2. Put 2 tbsp Vegan Mayo, 1 tsp Yeast Flakes, 1/2 tsp Dijon Mustard, 1 tsp minced Garlic, A squeeze of Lemon Juice in a Jar
  3. Put the lid on & shake it
  4. Add a tbsp Olive Oil & 2 tbsp Water
  5. Put the lid on & shake it like a polaroid picture
  6. Have a taste & season with a little Salt & Pepper

Phase 2 (Prepare the Salad)
  1. Drain the 400g tin of Jackfruit pressing each firmly between your palms to squeeze out the water
  2. Drain the 400g tin of Chickpeas & fry in a pan for a few minutes to crisp up (remember to save the Aquafaba from the chickpeas)
  3. Put the oven on Gas 6. Chop the Crusty Bread into crouton sized chunks & drizzle with some Olive Oil & put them on a tray in the oven for 5 minutes
  4. Whilst waiting for the croutons to crisp prepare your salad leaves & any other bits you would like to put in the salad


Phase 3
  1. Give the dressing another shake, add a little water if needed
  2. In a bowl combine the Chickpeas, Jackfruit & Caesar Dressing
  3. Lay the Salad Leaves out, put on the Jackfruit Mix & top with Croutons
