Chickpeas with Peanut Butter Dressing

This is a really yummy, easy to make filling lunch or dinner perfect to take for a long working-day. Peanut butter, Spinach, Chickpeas, these are a few of my favourite things. This is from Jack Monroe – Cooking on a Bootstrap. A really fabulous book for cooking on a budget. It is not strictly vegan (or vegetarian) but has lots of fabulous ideas that can easily enough be substituted with vegan alternatives. The Peanut Butter Dressing is Divine & can be used in many other salads.

Ingredients for Chickpeas with Peanut Butter Dressing

Serves 2

Phase 1

2 tbsp Peanut butter £0.10

60 ml of your preferred Oil £0.05

1/4 tsp Mustard £0.05

1/2 Lemon (or a lime) £0.14

Phase 2

2 Tomatoes £0.30

2 Onion Cubes or just 1/2 Onion £0.05

100 g Frozen Spinach £0.15

6 Garlic Cloves £0.12

Phase 3

1 tin Chickpeas £0.60

Total Cost £1.30 Cost per head £0.65

Creating Chickpeas with Peanut Butter Dressing

Prep Time 15 Minutes Cook Time 02 Minutes

Phase 1

  1. First and Foremost Wash Your Hands!
  2. Put 2 tbsp Peanut butter, 60 ml of your preferred Oil, 1/4 tsp Mustard, 1/2 Lemon into an empty jar with a lid
  3. Shake it until it represents a thick Peanut Butter Dressing
    (If you do not have an empty jar, whisk the ingredients together in a bowl)

Phase 2

  1. Roughly chop the 2 Tomatoes & 1/2 Onion (if not using Onion Cubes) & set aside
  2. Remove the top and tail of the 6 Garlic Cloves and use the tip of the knife to stab a hole through each
  3. Take 2 Onion Cubes (if using), 100 g Frozen Spinach & the Garlic Cloves and put them separately on a plate or in individual dishes and microwave for 2 minutes
  4. Check the Spinach & Onion Cubes are fully defrosted (if not microwave for another 1 minute)
  5. Remove the skin from the Garlic Cloves and roughly chop

Phase 3

  1. Drain & rinse the 1 tin Chickpeas in a sieve
  2. In a large mixing bowl put the Chickpeas, Tomatoes, Onion, Spinach, Garlic & Peanut Butter Dressing in a bowl & mix together
  3. Season with Salt & pepper if you feel it needs it & serve.
