Caramelised Onion Soup & Ice Cubes

Caramelised Onion Soup has to be my favourite soup, it is so simple but so rich in flavour, based on a very popular Ivy Dish that we had to make in bucket loads. The Onion Cubes are an excellent addition to so many dishes, they will feature in a few recipes on The Rabbit Food Blog. You will need a Silicone Ice Cube Tray, a Slow Cooker or Cast Iron pan with lid such as a Le Creuset.

Ingredients for Caramelised Onion Ice Cubes

Makes 15

2 tbsp of your preferred Oil £0.05

4 Large Onions £0.36

Creating Caramelised Onion Ice Cubes

Prep Time 5 minutes

Cook Time 8 hours

  1. Put Oven onto Slow Cook/Lowest setting using Gas Mark S or 1/2(half)
  2. Peel and finely slice 4 Large Onions
  3. Put the sliced Onions into your Cast Iron Pan or Slow Cooker & mix in the 2 tbsp of your preferred Oil
  4. Put on the lid & cook for 8 hours
  5. After taking out stir & leave to cool
  6. Put Caramelised Onions into Ice Cube Tray & Freeze (the Onions must be cooled before going into Freezer!)
  7. If using Caramelised Onions to make Soup leave them in pan & follow instructions below

Ingredients for Caramelised Onion Soup

Serves 4

Phase 1

1 batch of Caramelised Onions (as above) £0.41

2 tbsp Fresh Herbs such as Thyme or Rosemary (or dried) £0.30

3 Cloves Garlic £0.05

200 ml Red Wine £2.00

Phase 2

1 tbsp Tomato Puree £0.05

2 tbsp Flour £0.05

Veg Stock 1.5 Litres £0.05

Total Cost £2.86 Cost per Person £0.72

Creating Caramelised Onion Soup

Prep Time 5 minutes

Cooking time 45 minutes

Phase 1
  1. Finely chop 2 tbsp Fresh Herbs
  2. Add Fresh Herbs or Dried Herbs to the Caramelised Onions
  3. Grate the 3 Cloves Garlic into the pan
  4. Put on a medium heat and stir for 2 minutes
  5. Pour in the 200 ml Red Wine and let reduce until no longer visible
Phase 2
  1. Add 1 tbsp Tomato Puree and stir for 1 minute
  2. Put 2 tbsp Flour in a fine sieve & sift into the pan
  3. Stir in the Flour
  4. Slowly incorporate the stock 500 ml at time whilst continuing to stir
  5. Serve with Fresh Bread
